Sometimes I've listened to her music when I'm riding in the car of some girl from a small town with a pseudo-alternative personality, but I've never purchased any of her albums, or particularly enjoyed the 1 track that we all get to hear from Pitchfork when one of her new albums is coming out. I've heard she's good live.

WTF...? Björk is probable the most talented female singer since Billie Holliday, unfortunately being a genius and different, is not always understood and appreciated. The music from Björk is not "wall-paper" background to listen to in the shopping-malls though. She have produced great music from the eighties until now from the band "Sugarcubes" and going solo in the nineties...
Try some of her easy stuff first like the cover version of the bond theme "you only live twice" and "big time sensuality" or songs from the Sugarcubes, then move to more advanced stuff...
